One large butternut squash
goats cheese
the filling can vary:
a handful of plum tomatoes
baby spinach
portobello mushrooms
pine nuts
marinated peppers with mozzarella
half a red pepper
seasonings:
course black pepper
sea salt
cayenne chilli pepper
This is quite a versatile dish which is suitable for vegetarians. First the squash is roasted, then the vegetables. Afterwards the squash is removed and mashed with the vegetables and crumbled cheese. Finally roast the stuffed squash until the cheese has melted.
