2 pounds courgettes
500g spinach
2 onions
wholemeal flour
margarine
a sprinkle of marjoram
vegetable boullion
To serve add a dash of fresh cream.
A great summery dish with courgettes grown straight from the garden.
Remember not to overcook the soup to maintain that great emerald green colour.
Add a dash of fresh cream to serve to make the soup a wonderful light-green colour. Be careful when you add the cream that it doesn't boil.
