250g fresh pineapple
1 tsp Salt
20 uncooked Prawns
Spice Paste:
2 tablespoons Coriander seeds,lightly crushed
2 tablespoons fresh Coriander chopped
1 tablespoons Turmeric
1/2 teaspoon Shrimp Paste
1 stalk Lemon Grass chopped
5 Shallots, chopped
3 Garlic Cloves, chopped
3 Red Chillies deseeded and chopped.
Thin Coconut Milk:
50g Creamed Coconut dissolved in 450ml boiling water
Thick Coconut Milk:
25g Creamed Coconut dissolved in 50ml boiling water
To Garnish:
Sprig of Coriander
Fresh Pinapple,cut into wedges
